Raspberry-millet porridge with coconut milk and raspberry puree

For 2 people

Thanks to the high-quality essential amino acids, good amount of iron, silicon, magnesium, calcium, zinc and B vitamins, millet is a very healthy cereal. Its balanced nutritional composition can be very interesting for vegetarians and vegans. Moreover, since this cereal is also gluten-free, it can be a good alternative for allergy sufferers and people who have intolerance regarding wheat. Millet is easily digestible. Because of its relatively high phytin content, there are a few things to keep in mind when preparing it. Let the millet grains soak for at least 6 hours. Rinse the grains well and discard the soaking water. Millet should never be eaten raw. A sufficient cooking time of at least 10 minutes is therefore important. This will break down most of the phytin.

For this recipe you need

100g millet
200 ml water + 2 tbsp. water
200 ml coconut milk (alternatively cream from pasture milk)
1 tbsp. brown cane sugar or coconut blossom sugar
if necessary a little saffron
¼ tsp. cinnamon, ground
1 pinch of Himalayan salt (or primal salt)
300g raspberries
1 tbsp. ghee or clarified butter

Preparation
Let the millet soak for at least 6 hours before cooking. The soaking water should not be used. –
Put on a saucepan and bring the water and coconut milk to a boil. Add the brown sugar, cinnamon and salt. Let everything simmer on low heat for at least 10 minutes.
For the raspberry puree, put 1 tablespoon of ghee or clarified butter in a heated pot. Add half of the berries to the pot. Begin to mash the raspberries. Reduce the liquid over low heat. Finally, add 2 tbsp. water and the remaining raspberries.
To serve, place the warm millet porridge in a plate and spread the raspberry puree around the porridge.

Suggested Variation:
You can replace half of the millet with buckwheat flour. For other fruity variations, red or blue berry fruits are suitable, for example. And for variety, add toasted coconut flakes or dried coconut chips, for example, which you can add as decoration over the dish. For a beautiful yellow color provide a few saffron threads added to the coconut water.
